Minestrone Chicken


Chicken & Soup
  • 6 pancetta [chopped]
  • olive oil
  • 2 sprigs rosemary
Take out after cooked.

Food Processor 1
  • 2 small carrots
  • 2 sticks of celery
  • 1 red onion  
Put above into pot.  Then add only 1 stock cube.
  • 2 chicken stock cube

Food Processor 2
  • 1/2 head of brocolli
  • 1/2 head coliflower
Put into pot.  Then add...
  • 100g basmati rice
  • 100g dried macaroni
  • 2 chicken breasts
  • 1 handful broad beans
  • 1 handful peas
  • 200g baby spinach [only need 1 minute]
  • parmasean cheese to serv

Salsa Verde
  • 1 bunch of fresh tarragon
  • 1 bunch of fresh mint
  • 2 anchovy fillets
  • 1 tbsp cornichons
  • 1 tbsp capers
  • 1 heaped tsp dijon mustard
  • 1 clove of garlic
  • 3 tbsp extra virgin olive oil
  • 1 tbsp cider venegar
