Lemon Marinated Tortellini and Sun-Dried Tomato Skewers

Makes 20

  • 20 Fresh spinach and ricotta tortellini
  • 10 sundried tomatoes in oil, drained and halved
  • 20 large basil leaves

Marinade in a bowl and marinade pasta for 30 minutes at room temperature.
  • 1 tsp grated lemon zest
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • salt, black pepper

  • 20 6 inch skewers
  1. Tortellini -> Basil Leaf with Pepper in middle.  Zest on the Tortellini.
