Puffed Quinoa


Basil Lime Dressing
  • 1tbsp Basil
  • 1tbsp Parsley
  • 3tbsp Coconut Oil
  • 3tbsp Rice Vinegar
  • 1 Lime + zest
  • 1/2 cup Olive Oil

Blend together until smooth.  Add salt + pepper to taste.

Puffed Quinoa
  • 1/2 cup Puffed Quinoa
  • 2 ripe heirloom tomatoes
  • 2-3 peaches, nectarine or apricot
  • 240g nut mix
  • micro greens, sprouts, herbs

Place quinoa onto plate, slice fruit and tomato into wedges, add salad & dressing.
