Seared Halibut & Red Beet


Prep
  • 1kg peeled red beets
  • Juice the peeled red beets (should produce 300ml juice)
  • salt & pepper
  • 60g Chia seeds & place in 4 bowls
  • settle it for 50 minutes
  • clean and wash lettuce and herbs for garnish salad

Plating
  • Cut Halibut in 4 pieces
  • Season with salt & pepper, sear to preferred level
  • Place Halibut on the firm red beet reduction & garnish with salad
  • Drizzle lemon-olive oil on top & grate fresh horseradish on the dish
