Chicken Wings

WINGS

salt and pepper
425 - 450 degrees
20 minutes on each side.


HOT WINGS

2/3 cup Frank's Louisiana hot sauce
1 stick (1/2 cup) cold unsalted butter
1 1/2 tablespoons white vinegar
1/4 teaspoon Worcestershire sauce
1/2 teaspoon Tabasco sauce or other hot sauce (like the Sriracha I used)
1/4 teaspoon cayenne pepper
1/8 teaspoon garlic powder
 

Falafel Wraps


Falafel
  • 400g tin mixed beans
  • 400g chickpeas
  • 1 lemon zest
  • tbsp harissa
  • tsp allspice
  • cilantro
  • tbsp flour to bind it
  • olive oil

Sides
  • 2 mixed color peppers
  • 4 spring onions
  • 8 tortillas
  • 1 tbsp linghams chili sauce
  • 250g cottage cheese
  • some pickled red cabbage

Golden Chicken



Gratin
  • 800g potatoes
  • 3 medium white onions
  • olive oil
  • 1 chicken stock cube...maybe half
  • 1/2 bunch of sage
  • 100ml single cream
  • 30g parmesan cheese

Chicken
  • 4 skinless chicken breasts
  • fresh rosemary
  • 2 slices of smoked bacon

Thai Chicken Laksa



Chicken
  • 4 skinless boneless chicken thigh
  • 1 heap tsp Chiniese 5 spice
  • 1 tbsp runny honey
  • 1 tbsp sesame seeds
  • 1 fresh red chili

Sticky Kickin Chicken


Salad
  • 200g thin rice noodles
  • sesame oil
  • 800g watermelon
  • 2 little gem lettuces
  • 1 handful of radishes
  • 1/2 bunch Mint (Chopped nice/chunky)
  • 1/2 bunch Cilantro (Chopped nice/chunky)

Chicken
  • Skinless Boneless Chicken Thighs
  • Chinese 5 spice
  • olive oil
  • 2 tbsp sweet chilli sauce
  • 2 tbsp sesame seeds

Mexican Tomato Soup



The Soup
  • 4 Big Green Green onions.  Leave a couple strands for garnish
  • Extra Virgin Olive Oil
  • Fresh Bunch of Coriander
  • 4 Cloves of Garlic crushed
  • 450g  1 jar of blackened/roasted red peppers
  • 2 Cans of Crushed tomatoes.
  • 800ml of boiling water from the kettle
  • 80g of rice.  or handful.

  • Blend soup together to make a bit chunky
  • Season 1 whole Lime and salt and pepper to taste.
