4 Cheese Zucchini Lasagna


  • 1 tbsp butter
  • 1 onion
  • 3 cloves garlic
Cook for 2 minutes medium high.  Then add meat
  • 450g ground beef
  • 225g pork
Cook for 5 minutes until browned.  Then add tomatoes.
  • 798ml diced tomatoes
  • 156ml tomato paste
  • oregano
  • basil
  • salt & pepper
Simmer for around 30 minutes.  

Gnocchi With Asiago


Serves 10-12

  • 2lb (1kg) gnocchi
  • 512g rapini - cut to 5cm pieces
  • 150g diced pancetta
  • 1 large onion, chopped
  • 4 cloves garlic, chopped
  • 1/2 cup white wine
  • 3/4 cup Asiago grated
  • salt & pepper

Cook gnocchi.  Once cooked use slotted spoon to remove.  Add rapini to the boiling water and cook for 2-3 minutes.  Keep 2 cups of water and drain rapini.

Blackened Chicken (Greek)


Couscous
  • 2 peppers
  • 1 chili
  • 4 spring onions
  • 1/2 bunch fresh dill
  • frozen peas
  • black olives (small handfull)
  • 40g feta cheese
  • user the food processor to just chop up the stuff.

Chicken
  • dried oregano
  • ground all spice
  • lemon zest
  • olive oil for pan

Vegetable Manicotti


Vegetable Manicotti

  • Boil Manicotti

  • Olive oil
  • 1 Red Pepper
  • 1 Yellow Pepper
  • 1 Onion 
Chopped into pan and cooked a bit.

  • 500g Ricotta
  • 1/3 cup Parmesan
  • Salt + Pepper
  • 1 Egg
  • 250 ml water

  • Pasatta on top after cooked.
  • Parsley for garnish

Ginger Beef


Ginger Beef
  • 1 lb flank steaks or 1 lb sirloin steak, sliced into narrow strips
  • 3/4 cup cornstarch [tapioca]
  • 1/4 cup water
  • 2 eggs
All into a bowl and then add meat and coat it.  
Canola oil Boiling and fry beef until brown.

Tortellini & Cream Sauce


White Sauce
  • 1/2 cup chicken broth
  • 1/2 cup white wine
  • 2 cups heavy cream
