Mapo Tofu

Ingredients

To marinate, freeze, and thaw under pressure.  Then put into marinade and it will act like sponge.

In a wok
  • Coconut oil
  • Tofu Firm into chunks
  • Mince onion and Garlic & Ginger
  • Chili's whole. To see.
  • Micro Cabbage, or small greens.
  • Woodier mushrooms, cooked and prepared on side

Carrot, Honey, and Ginger Soup

Makes 20

Melt butter in pot
  • 2 tbsp butter

In the food processor, then into pot, cook until soft.
  • 6 cups carrots, chopped
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 10cm piece fresh giner
  • 3 celery sticks

Lemon Marinated Tortellini and Sun-Dried Tomato Skewers

Makes 20

  • 20 Fresh spinach and ricotta tortellini
  • 10 sundried tomatoes in oil, drained and halved
  • 20 large basil leaves

Marinade in a bowl and marinade pasta for 30 minutes at room temperature.
  • 1 tsp grated lemon zest
  • 2 tbsp lemon juice
  • 4 tbsp olive oil
  • salt, black pepper

  • 20 6 inch skewers
  1. Tortellini -> Basil Leaf with Pepper in middle.  Zest on the Tortellini.

Lemon Chili Shrimp Sticks


Makes 20

Put in a nonmetallic bowl:
  • 2 garlic cloves, crushed
  • 1/2 piece fresh ginger
  • 2 tbsp finely chopped cilantro leaves
  • 1/2 tbsp Chinese hot chili sauce
  • 1 tbsp light soy sauce
  • 1 tbsp honey
  • 3 tbsp lemon juice

Mustard Chicken


Dauphinoise

Oven at 425
Boil 200ml water

Food Processor
  • 1kg (454g) potatos
  • 1 red onion
  • Put into tray (35x25cm)
  • 1tbsn nutmeg
  • 2 cloves garlic
  • 225ml cream (maybe less to skip boiling)
  • 2 bay leaves
  • bit of olive oil
  • parmesean
  • thyme sprigs
Mix together with hands.  Cook for 15-20 minutes.  Or until Golden brown and bubbling.

Red Sauce (Jools)



Food Processor
  • 4 green onions
  • 1 carrot
  • 1 celery
  • 1 chili
  • 1 teaspoon fennel seeds

Put Mixture into a pot and simmer. Add:
  • 1 crushed tomatoes
  • 4 cloves garlic
  • 4 tbsn balsamic vinegar
  • olive oil, just bit.
  • salt & pepper
